gnu: guile: More cross-compilation tweaks.

* gnu/packages/guile.scm (guile-2.0): When cross-compiling, unset
  GUILE_LOAD_PATH and GUILE_LOAD_COMPILED_PATH, and set
  CC_FOR_BUILD=gcc.
